Cook It Yourself - HOTDXS Chili


In 1977 this meal was adopted as the official dish of Texas. I'm sure this is something that you will
enjoy year around. When the soldering iron cools down, fire up the stove and make a pot of chili.
In the year 2022 we will be celebrating the 45th anniversary of this dish. We hope by then you've
made this dish and liked it. Also if you have your own favorite chili recipe please share it with us.

1 lb ground beef 1 lb ground sausage ( hot ) 2 cup chopped onion 3 cloves garlic, minced 3 T chili powder 1 1/2 t dried oregano 1 t dried basil leaves 2 t dried cilantro leaves 1/4 t crushed red peppers 2 t ground cumin 1 t sugar 2 t salt 3 cans (1 lb size) diced tomatoes, undrained 3 cans (8 oz size) tomato sauce 1 can (6 oz size) tomato paste 1-2 cans (1 lb size) kidney beans, drained DIRECTIONS 1. In a chili kettle, over medium heat, saute beef and sausage, stirring occasionally, until red color disappears. Keep meat in small chunks. Pour off fat. 2. Add onion, garlic, chili powder, oregano, basil, cilantro, red pepper and cumin, mix well. Cook, stirring, until onion is tender - about 5 minutes. 3. Stir in sugar, salt and tomatoes, tomato sauce and tomato paste; mix well. Bring to a boil then reduce to a slow simmer, covered, stirring occasionally, until thickened and flavors are blended - about 40 minutes. 4. Add beans; simmer, covered, 10 minutes, or until hot. Makes 12 to 16 servings.
